Tamarind & Co. is run by a family, and the people who cook and serve here are the reason the food is consistent from one visit to the next.
The restaurant was founded by Viswanatham Rapelli, who set out to bring proper Indian fine dining to Cranbury rather than a version of it adjusted downward for the suburbs. The kitchen is led by Executive Chef Diljeet Singh, whose training shows most clearly in the tandoor work and in gravies that are simmered rather than shortcut — the base of a butter chicken or a rogan josh takes the time it takes.
Around them is a team that treats the dining room as an extension of a home. One standard is shared by everyone here: every plate that leaves our kitchen and every guest who walks through our door is a reflection of it. That means masalas pounded in-house, dum biryani sealed and baked to order, and spice levels cooked the way a guest asks rather than the way it is easiest to fire.
