Food for a party that never quite sits down
Build around dishes that are as good at hour three as at hour one: gravies, biryani, noodles and rice, breads that can be refreshed in batches. Add one or two fried appetizers timed to the busiest arrival window rather than to the start. Finish with sweets priced per piece — gulab jamun and rasmalai travel best.
Family-style thalis and mixed platters work especially well for graduation lunches, where the table wants to share and photograph rather than order individually.
Counts and counters
Trays serve roughly 10–12, 20–25 and 30–35 guests; for a standing party plan a little more appetizer and a little less entrée than you would for a seated dinner. Appetizer trays start at $85, entrées at $90, biryani from $85.
