Order the things a clay oven does best
If you are driving in, order what cannot be done at home. Lamb chops and tandoori shrimp off the Mixed Platter, whole Tandoori Pomfret on a banana leaf, malai tikka, and breads straight off the oven wall. Then one long-simmered gravy — Dal Makhni or rogan josh — and a dum biryani sealed and baked to order.
